They have a wicked sense of humour, something a lot of these answer's lack, I can also name a few others who are drunken bad tempered hooligans. (Scot's,Canadians,Englishmen) mind you their ancestors could have been Irish. I adore them anyway.

These are the stereotypes that I know of, not things that I necessarily believe:
1) Heavy drinkers
2) Fighters with bad tempers
3) Fun loving, funny, great sense of humour and jokesters
4) Grow/eat a lot of potatoes
5) Celtic music, step-dancing
6) Irish Rovers (Grandma Got Run Over By A Reindeer, Wasn't That A Party, The Unicorn Song)
7) Leprachauns and Fairies
8) St. Patrick's Day -- lots of people named Patty/Paddy
9) Lots of people with last names starting with O' (O'Day, O'Shannon, O'Scully etc.)
10) Ireland is where the pot o' gold meets the end of the rainbow!
11) They make Lucky Charms cereal
12) Lots of four leaved clovers in Ireland
13) Ireland is said to be one of the most beautiful countries in the world (I will see this for myself someday)
14) Ireland is said to be a very spiritual and magical place where ghosts and such are considered quite common-place

Irish people all have a drinking problem is the biggest stereotype. I'm Irish and I don't drink so stereotypes are not always right.

A stereotype is that Irish people are jolly, good natured people who like to drink all the time.

Drunk, stupid, insane, lazy, short tempered and fiesty(though I can be this one quite often). I'm sure there are some English people out there that think of new things everyday. At certain times in history, people have also questioned whether or not we were even white.
