They're just fine. You need to make sure that you Sign in the presence of your witnesses, that they are of sound mind and old enough to be witnesses (usually 18, sometimes 21), and THEY MUST SIGN as well. I suggest you get THREE witnesses, not two. Also, it helps to do this with a Notary present. A notarized will is somewhat more readily recognized, although in many places it isn't necessary. (In some it is required though!)

They are quite legal and as long as you have them dated and signed by witnesses then it is quite the proper will and as it known ( any paper ) with signatures and witnesses is acceptable when it comes to a will anyway. Just as long as you state that you are of sound mind and signed it with your own will and not forced to either that this is a true and final will for your use and the name of the people in it and the witnesses and copies given to whoever is stated in the paper. Include who gets what and when, and also a person in charge of seeing that the will is also distributed as you asked for. you can also send a copy to your executor of your will and ask them not to open the letter unless in front of a judge or a justice of the peace that verifies it is unopened and registered mail. This will ensure no tampering with the contents if someone wishes to dispute the copies that are open, and this sealed one will confirm your wishes in a court. One other way is to video tape your request and to seal it as well and give copies to the persons you are trusting with your wishes.

If something is worth doing; it's worth doing it right. Lawyer's fees for wills aren't that expensive. (Call a few general practitioners & ask -- not estate planning specialists who deal with large complex estates) When you consider the value of the assets you will be disposing of by your will, & the cost of possibly screwing it up, the attorney's fees are minimal.
