Almost all books are printed in serif. The theory is that the serifs make large blocks of small text easier to read, as they guide the eye along the page. This is especially true in dictionaries, which have lots of small close-printed text.

It is generally thought that it's easier to read in printed form than sans-serif, whereas sans-serif is considered easier to read on a screen. However, studies have not been able to conclusively prove whether this theory is really true.

Extract from Wikipedia:

"Typefaces with serifs are often considered easier to read in long passages than those without. Studies on the matter are ambiguous, suggesting that most of this effect is due to the greater familiarity of serif typefaces. As a general rule, printed works such as newspapers and books almost always use serif typefaces, at least for the text body. Web sites do not have to specify a font and can simply respect the browser settings of the user. But of those web sites that do specify a font, most use modern sans-serif fonts, because it is commonly believed that, in contrast to the case for printed material, sans-serif fonts are easier than serif fonts to read on the low-resolution computer screen."

I imagine tradition has much to do with it.
It tends to be easier on the publishers and reader's
in general ... Uno. And it probably saves a lot of time
all around when everyone doesn't have to sit around
all day long trying to figure out which is the best font
to use. ha ha :D
