Yeast ferment products. Generally speaking, it's the yeast that benefit us, by providing us with ethanol. The yeast are just like any microorganism, trying to survive, and when they have food to ferment they can propagate and survive. That's really all there is to it.

the yeast feeds on the glycogen and elimnates ethol alcohol and CO2. this is what happens when bread rises.

um, the yeast can give off their waste products when they digest the sugars? so, essentially they can eat and crap.
