It will only work if she places more importance on him than she does her Catholic faith because she will have to give that up. According to both Jewish and Christian beliefs, the man is the spiritual head of the family. So she better want to become Jewish.
If her faith is more important to her than her feelings for a mortal man then it will not work out for them.

Yes you can love him but you cant marry him if he is a religious Jew. According to the covenant the Jews have with Yhwh he should not marry a non-Jew unless you convert.
