How about making a lovely fruit crumble, rhubarb or apple, or a mixture of fruits? The crumble topping requires you to rub the fat, flour and sugar together, so that is the rubbing in method. You could make a nice custard to have with it, or just some whipped up cream or pour over cream.
Here is one recipe, but there are millions to choose from. And rhubarb is quicker to prepare than apples

Melting method - flapjacks. Rubbing in - jam tarts. Whisking - dont think you have time to make meringues and just about anything else is tricky - eg souffle - but how about a sweet omelette?

Pastry based things are easier by rubbing in method... (unless you have a microwave)...
Sponge cakes by whisk... Add nice flavourings like jam or chocolate chips and give alternatives to earn extra credits :)

Anything with pastry - apple pie, rhubarb pie, etc. or even a crumble. Both the pastry and the crumble topping use the rubbing in method. Enjoy!
