Title: Chicken Egg Dopiaza Foo Yung
Yield: 8 Servings
6 Eggs beaten with:
1 ds Salt and pepper
300 g Chicken fillet meat cut in
-strips
1 md Size onion chopped
3 Mushrooms; or so (not
-chinese, fresh ones)
1 ts Minced garlic

1. Season the chicken fillet with a bit of soya sauce, pepper, 2 drops of
sesame seed oil and leave it there for about 10 minutes
2. Heat up the wok, add 1 tablespoon of oil, add in the garlic and then
chicken fillet, fry for about 3-4 minutes or until the chicken is cook and
put it aside.
3. Wash the wok and heat up the wok again. This time add in about 2
tablespoon and add the chopped onions, stir fry for 1-2 minutes and pour in
the eggs in circle , if your wok/frying pan is too small then split egg
into 2 parts and cook separately, add in the chicken, mushroom, on the
eggs. Be careful not to break or it won't turn out that nice, the secret is
the you need more oil so that the eggs won't stick on the wok.
4. Once the egg turn slightly brown, then its cooked.
Variation: for seafood foo yung, add in any favourite seafood eg prawns,
scallops, fish bites. other type of foo yung is with char siew, mince
pork.
Basically foo yung if very simple and u can add in any of your favourite
food into it but in the restaurant, its pretty standard with either meat,
seafood or vegies.

Any dish that's called dopiaza just means that the masala (sauce) is started with 2 (do) piaz (onions). In India, the onions are smaller than in the US, so one medium onion should be good enough if you're using American onions.
Here's a recipe:
4 Eggs (hard boiled)
1 onion
1/2 tomato (pureed)
3-4 cloves of garlic
1/2-inch piece of ginger
1-2 green chilies
2 tbsp chopped coriander leaves
Salt To Taste
Red chili powder to taste
3/4th tsp turmeric powder
1/2 tsp coriander powder
3/4 tsp garam masala
2-3 tbsp vegetable oil / ghee
1 cup green peas or 250 gms paneer
Preparation:
Remove the shell of boiled eggs & keep aside. If using Paneer cut into cubes and fry till golden & set aside for later use.
Make a paste of onion, garlic, ginger and green chilies in a mixer or chopper.
Heat oil in a kadhi or wok and add onion-garlic paste and fry till golden brown.
Add all the spices (salt, turmeric, coriander & chili powder) except garam masala and fry for a minute and add tomato puree. Fry till it starts leaving oil.
Add a cup of water and cook till it dry's.
Now add the fried paneer cubes or green peas (which ever using) and boiled eggs.
Add 1 cup of water and bring to boil and reduce the flame.
Simmer for 10 minutes.
Garnish egg curry with garam masala and coriander leaves and serve hot with paratha, roti or rice.

EGG DO PYAZA
Ingredients:
Eggs - 8
Thinly sliced onions4 ( medium size)
Tomato puree2 cups
Finely chopped garlic1 tbsp.
Finely chopped ginger2 tbsp.
Finely chopped green chilli1 tsp.
Red chilli powder
1 tsp.
Garam Masala Powder
1 tsp.
Coriander powder
2 tsp
Turmeric Powder
1/2 tsp
Salt to taste
Vegetable oil5 tbsp.
Chopped green coriander leavesfor garnishing
Method:
1.Boil eggs and cut into 2.
2.Heat oil in a pan. Add ginger, garlic and green chilli and fry over medium heat for 2 minutes.
3.Add tomato puree, garam masala, turmeric powder, red chilli powder, coriander powder and salt. Bring it to boil and then cook on medium for 5 minutes.
4.Add sliced onions and cook until it becomes tender.
5.Add eggs. Stir well so that all the pieces are coated well with gravy.
6.Add water. Bring it to boil on high and then reduce the heat to medium.
7.Cover the pan and cook until the gravy becomes thick.
8. Garnish with coriander leaves and serve hot.

There doesn't seem to be recipes for egg dopiaza. They are all made with some kind of meat - lamb, chicken, pork...
Here is a site with many, many Bengali recipes, including dopiaza. Maybe you can change the recipe to make it the way you like it.
