mountain bikes, racing bike, kids bikes etc, also would a business like that work better if the bikes were delivered to the clients & picked up?

No way! Driving is scary enough. A friend of mine once started a bike rental business and it's really difficult 'cos they are so easy to get hold of cheaply to buy 2nd hand etc., and if you are the sort of people to cycle on holiday, you'll probably have your own bikes already and the sort of family car to transport them.
