While I'm not the Expert on this subject, I'd say that I think it's in memory of His sacrificing Himself for the sake of Man, Sir.
The fish was the early symbol, though, like you rightly said, Sir.
I'm not too sure when the change took place nor as to why it did so.

The symbol of the Cross is a symbol of God's love.
The Crucifix (the one with a human figure on the Cross) especially shows Christ's sufferings on the Cross.
How much do you think God loves you?
When you look at the cross, it is THAT much.
The Cross tells that:
There is a God who loves.
This God rolls his sleeves and came down to earth for us.
Nothing stops God from loving us. Not even the Cross.
Christ suffered because Christ loves.
It poses a question, are you willing to suffer to love? Are you willing to help the poor, the sick and those who are in prison?
Are you willing to suffer with them? All because you love God?
The Cross is a great symbol and a great reminder of the God of the christian.
But you see, the Cross is the worst death ever if compared to the gallows or the noose. Because the death on the cross is extreme. You are left there to die and to be eaten by vulchers..etc.
It is the worst kind of death there is.

It took a while for the cross to be adapted as the symbol for Christianity. It's supposed to represent that his death was the pinnacle of gods love for humanity. The original symbol used by early Christians was an Ankh, and sometimes the fish.

not really, Jesus said to His Disciples that when He was raised up (on the cross) that He would draw all people to Himself, meaning that His death on the cross would be the way of salvation for all who believed in Him.
also we see the helplessness of God on the cross and so it is a powerful symbol of His love for humanity.

To be quite honest, yes, it is the constant reminder. I don't think early Christians had it, they went with the fish. I am not sure when it started.

Your sin required a sacrifice, the symbol is of that sacrifice. Without that sacrifice you would have no hope and no choice.
With that sacrifice it put the ball in your court, you are not condemned to hell, you get to make that decision for yourself.
Jesus was not forced onto that cross for you he gave himself over to it for you. Jesus gave his blood so that you would not have to suffer for your sins.
