The heat isn't an issue really. If it's a restaurant/take-away and there's a type of curry you like, you can ask them to make it at hte strength you desire.
For instance, I'm not a big tomato fan so that's me screwed for most Indian dishes. So I get a Korma which I like because of the cream. But I too like medium to hot so I ask for it and they add extra chilli.

if you're eating out madras. if you're going to make your own get some schwartz fragrant thai hot crushed curry spices from the supermarket it makes a absolutely gorgeous curry.

For flavour it has to be a Lamb dopiaza......not too intense, and a mound of crispy fried onions on the top really do it for me.
ps ...dont forget your garlic nan.
