I do not do cereals, and I am living in a hostel environment so it needs to be quick.

Porridge. You can add nuts to it. And milk or cream. Depending what degree/kind of diabetes you have, you could add fruit as well, or honey. Or, as a savoury you could add nutmeg and/or cinnamon to it or even salt.

Baked Bagel Thins

3-ounce (90 g) whole wheat bagels
refrigerated butter-flavored cooking spray


Preheat oven to 450°F (230°C), Gas Mark 8.
Slice each bagel into 4 crosswise slices. Spray a non stick cookie sheet with spray. Place the slices in a single layer on the sheet and spray again.
Bake for 5 minutes, until lightly browned.
Eat immediately.


English Muffin Breakfast Pizza

2 tablespoons reduced-fat cream cheese
1 teaspoon reduced-fat sour cream
1/2 English muffin
1 small peach, peeled and sliced
ground cinnamon to taste
1/2 teaspoon light brown sugar


Preheat broiler.
In a small bowl, combine cream cheese and sour cream. Spread evenly over English muffin half. Arrange peach slices on top.
Sprinkle with some cinnamon and the brown sugar. Broil until cheese browns around the edges, about 2 minutes. Cut in half or quarters and eat warm.


Tuna Sub

1-pound (480 g) loaf of French or sourdough bread
1 6-ounce (189 g) water-packed white tuna, drained
1/3 cup (73 g) nonfat mayonnaise
1 teaspoon (5 ml) lemon juice
1/2 teaspoon (2.5ml) chopped fresh tarragon
freshly ground pepper
2 leaves romaine lettuce
3 hard boiled eggs, white part only, sliced
2 large ripe tomatoes, about 1pound (480 g) total, sliced thin
4 thin slices dill pickle


Cut the bread in half lengthwise. Hollow out the bread leaving a 1 inch ( cm) shell.
Combine the tuna, mayonnaise, lemon juice, tarragon, and pepper.
Place the lettuce leaves on the bottom of the bread. Top with tuna salad. Layer the tuna with egg whites, tomato slices and pickles. Wrap tightly in plastic wrap and refrigerate until ready to serve.
To serve slice diagonally and place on serving platter.

I am also diabetic, sometimes eat sausage patties and frozen waffles with sugar free syrup or cereal. If you don't already belong, go to yahoo groups, health, and join 'ALLDIABETICSINTERNATIONAL" GROUP. They probably saved my life back in January, and have extensive recipe files. Great people, all diabetics, really care about newcomers. Good luck.

Baba ganoush INGREDIENTS: *3 tbsp olive oil *2 aubergines, diced *2 garlic cloves, peeled *½ lemon, juice only *4 tbsp fresh basil
DIRECTIONS: 1. Heat the olive oil in a small frying pan before sautéing the aubergines until soft.
2. Transfer the aubergines and the rest of the ingredients to a food processor.
3. Blend until a rough paste is formed.
4. Scrape the baba ganoush into a bowl and serve with griddled bread or crackers.

French toast strata INGREDIENTS: *1/3 cup SPLENDA® Granular *1 cup egg substitute *2/3 cup skim milk *3/4 teaspoon maple flavor *8 slices cinnamon raisin bread *2 cups peeled apples, thinly sliced *1/4 cup low fat cream cheese
DIRECTIONS: Preheat oven to 350°F. Spray an 8 x 8-inch square cake pan with nonstick cooking spray. Set aside.
Blend together, in a medium size mixing bowl, 1/3 cup SPLENDA® Granular, egg substitute, milk, and maple flavor.
Tear Cinnamon Raisin Bread into 1 to 2-inch pieces. Toss bread and sliced apples into mixing bowl with other ingredients. Toss to just coat bread. Pour bread mixture into prepared pan.
Cut cream cheese into 8 chunks and place on top of strata.
Blend remaining 1 tablespoon SPLENDA® Granular and cinnamon together. Sprinkle over strata. Cover and refrigerate overnight.
Bake in a preheated 350°F oven for 40 to 50 minutes or until lightly browned and set. Serve immediately.

Oat bran pancakes INGREDIENTS: *1 cup oat bran hot cereal, uncooked *1/2 cup all-purpose flour *1/4 cup Splenda® Granular *2 teaspoons baking powder *1/8 teaspoon salt *1 1/4 cup fat-free milk *1/4 cup egg substitute
IDIRECTIONS: Over medium to medium-high heat, heat nonstick griddle or frying pan.

Using scant 1/4 cup, pour pancake batter onto hot griddle. Cook pancakes until puffed and dry around the edges. Flip and cook other side until golden brown.

Cover and chill up to 24 hours. Before serving, garnished with sliced lemon peel, if desired. Makes 6 (1 cup) servings.
