Some history:
History records that in the first crusade, Bohemund I, a Norman lord, had red crosses cut from his mantles and distributed to the 12,000 crusaders, who then wore them as a distinctive badge on their garments.
In subsequent crusades, each nation was distinguished by a cross of a different colour. France long had a red cross on its banners while England used a white cross. Time and again in history, red and white are found as the colours of France or of England.
Red and white were approved as Canada's official colours in the proclamation of the royal arms of Canada in 1921 by King George V.
In 1957, the colour of the maple leaves on the shield of the Royal Arms of Canada was changed from green on a white ground to red on a white ground in recognition of Canada's official colours.

Red represents the blood shed settling the country, that's why the Maple Leaf was chosen. It changes it's colour to red in the fall. Also, at one time, The Maple Leaf Forever was being considered as the national anthem before O Canada was chosen.

Because if it was blue it would be the Toronto Hockey team, and that was already in use by the team. (And they mostly considered red or blue when deciding.)
Probably because the official flag before it was adopeted in 1964, was the Canadian Red Ensign. So to keep in the same colour.
A better question is why is it maple at all. I am from BC, Canada and have always wondered why.

The maple leaf flag is one of the most recognizable flags in the world. The red ensign was dated and did not give us our own identity, too much British influence. Maple leaf all the way.

I think it would have been nice if they made the leaf green. I don't like the red that much. A green leaf in the middle, because the mape leaf is green for most of the year, and also the stripes on the side could be blue for all the oceans that surround. I

what other colours? maple leafs are either red or green, i just all ways assumed that it is red because the flag was designed in the fall.
