prepare and cook couscous as describes on the package, add cocked chick pea, fresh lemon juice, fresh coriander, olive oil, salt and pepper!

Lemon and Parsley Couscous
50g couscous per person
1 lemon
1 tablespoon parsley
vegan mayonnaise
The recipe serves 2.
Soak 100g Couscous in the amount of water suggested on the packet (this will change depending on whether you are using brown or white couscous).
Taste to make sure that it is soft and fluffy and if not add more water. Once it is ready add the juice of the lemon and finely chopped parsley. Stir well.
Just before serving add 2 tablespoons of vegan mayonnaise.

Roasted Onion and Cherry Tomato Couscous
1 onion
12 cherry tomatoes
50g couscous
2 teaspoons sun-dried tomato paste
finely chopped parsley
olive oil
Chop the onion and put in and oven proof dish with the tomatoes and roast for 30 minutes.
Once they are ready add the required amount of boiling water to the couscous (or until soft) and add in the onion and tomato mixture including any excess oil. Stir in the sun-dried tomato paste and parsley.
Leave for 5 minutes and stir again and then taste to make sure the couscous is soft.
If necessary add more water, leave for 5 minutes and taste again. Season if necessary.

Halloumi & pepper couscous.
Makes enough for 2 people.
150g couscous
A jar of mixed pepper, antipasti style, about 290g of it
2 tbsp olive oil
1 crushed garlic clove
140g mixed mushrooms, sliced
15g mixed fresh herbs (oregano, basil, flatleaf parsley) finely chopped, bit extra to garnish with at the end.
Put the couscous in a shallow dish and pour over 300ml of boiing water. Cover it tightly with some cling film and leave for about 5 minutes.
Put the peppers in a pan and heat them gently for 3 or 4 minutes.
Heat one of the tablespoons of olive oil in a large frying pan and fry the garlic for a minute. Add the mushrooms and fry for 3 or 4 minutes, until they are golden. Set that aside.
Add the remaining olive oil to the frying pan and fry the halloumi for about 2 minutes, til it's lightly golden.
Stir the peppers and chopped herbs through the couscous and season. When serving put the couscous on the plate and top with the halloumi and mushrooms. x

Cook the cous cous using good stock like chicken or veg and set aside when ready. In a pan heat up some butter and olive oil and gently fry some chopped spring onion and tomato for about 3-4 mins so that it turns soft and translucent and then throw in the cous cous and give it a quick stir for about a min. Add some fresh black pepper. Really tasty on its own or as a side.

Take two glasses of boiling water for one glass of couscous, some butter, a small tbsp of turmeric, and a handful of sultanas.
-In a tuppaware bowl, put the couscous,the turmeric, and the hot water, mix with a fork, cover for 7 mn.
-After the time elapsed, add the butter, the sultanas salt and cover again, microwave for one mn. Make sure you mix the melted butter with the couscous.
Serve hot with lamb sauce.

Olive oil
Roughly chop the veg, keep cherry tomatoes whole, sprinkle on olive oil in a roasting tin. Roast in a medium oven until the vegetables are soft.
Prepare the cous cous as indicated on the packet.
Stir the vegetables and cous cous together.
Serve with sausages.
Yum.

You can take some cooked and cooled cous cous, add fresh herbs like parsley, diced tomatoes, cucumber, onion, lemon juice and olive oil and refrigerate....this is a nice cold salad.
Or I always just eat it fresh with sauteed spicy vegetables (I usually just use frozen).
Cous cous is very versatile, use it like you would rice or pasta.
