The chances of these foods making you fat is so remote it's not funny. I don't know how many calories you consumed but whatever, they won't make you fat.

Easy on the mangoes, if you've noticed when you drink water after the salty mangoes you get that bloated feeling. Salty foods actually make you retain water and well they're not really good for your kidney and blood pressure so just take it easy. 2 table spoons of rice and 5 tablespoons of your food is crazy.. too little. Don't make your body hungry. All I know is 1 mango is about 135 (the whole mango) and a cup of rice is around 202 (I think I'm not sure). So the better choice would have been eat 1 cup of rice then your pork thing and maybe a slice of mango.

Eating that much fruit probably won't make you fat, but it might give you diarrhoea. Carbohydrates like rice are fattening if you eat too much, but a whole two tablespoons will not make you fat. Pork should not be a problem because you need protein. Your diet doesn't sound balanced. Why don't you consult with a professional dietitian.

Carbs won't make you fat. Overeating and overeating foods that are too fatty or starchy/sugary can contribute to weight gain. The body needs carbs to run efficiently. If you don't eat the right anount, you can cause the body to enter ketosis. PRoperly manage your intake and you'll be fine.
Unripe anytihng is just wrong. The fruit/vegetable hasn't had a chance to ripen so the vitamins and minerals might not be at their peak. Also, there's a good chance eating unripe things can make you sick.

First off, like stated above, unripe mango's should make you sick, if you didn't get sick from it, then you are lucky,
secondly, what you are eating you may think is healthy to lose weight, but I'm not sure you you are getting enough calories to sustain yourself through out the day.
To me it sounds like you have an eating disorder. your not eating properly, and just because i said eating disorder to get defensive, there are other disorders besides the obvious ones, but you are not eating healthy you need to add more vegetables, and lean meats to your
diet, plenty of water, and even ice tea, your not gonna get fat eating that but i doubt you will be able to sustain a healthy weight doing so...

rice is high calories, generally low fat. mangoes are negative calories, meaning that you are burning off some of the calories in rice whilst eating them, but whether them being raw would make them harder to digest (this makes them negative calories) tomato sauce, is sort of ok i'd think, is it pure tomato, or ketchup, or what. i don't understand what you mean by ground pork. but no, mangoes don't make you fat.
x
(and carbohydrate's don't make you fat, i think it's just whilst you're body is using the energy of the carbohydrates to keep you going, it isn't using the fat stores in your body, and ripe mangoes are still negative calories)

My Filipino side is going , "Green Mangoes, is she pregnant?"
Okay, serious now. Too much of anything will make you fat,
but none of what you just said is enough to make you fatter right away, even if you taped bags of it to your hips. 2T of rice? 5T of pork and tomato sauce?
Look up your ideal weight for your height, and see if you are close.
try this:

And to figure out the calories, try this:
http://kidshealth.org/kid/nutrition/food/calorie.html
Your best tool is educating yourself as much as you can.
I would suggest eating a wider variety of vegetables every day, and
if your Filipino metabolism is like mine, back off on the sugar (sweets) and salt (including toyo) because our native diets are too heavy in those.
