Duck sauce is a chinese condoment, also widely known as Plum sauce. . Duck sauce is used in Chinese cuisine as a dip for deep-fried dishes, such as spring rolls, egg rolls, noodles, and deep-fried chicken balls. It is made from sweet plums or other fruit such as peach or apricot, sugar, vinegar, ginger and chiles.
Origins of the Name
The name "duck sauce" comes from the fact that Western Chinese restaurants began serving it with the pancakes that go with Peking Duck, under the mistaken impression that this was an authentic practice. (In China, Peking Duck is traditionally served with hoisin sauce)

All of the sauces are color coded. They soy sauce is black, the hotter sauce is red and the duck sauce is orange. They are easier to tell apart that way. Don't try to look for the hard answer when the easiest one is right in front of you.

It does not contain any duck. The color is from fruit additives such as apricots and food coloring.
