I'm at a part time uni doing a writing course and there's this old eccentric woman who actually attempted to bite my arm as I was passing someone work! I don't know how to deal with her! I'm scared!

Confronting her will do no good. If she is so eccentric that she bites people, at this age, it is probably part of a disorder she's had her entire life, and nothing you say to her will impact her behavior.
Just keep on your toes (without looking like you're doing so!!) whenever she's around, and jump gracefully away if she dives at you with an open mouth.
Whenever you need to communicate with her, just treat her sociably, like you would with any regular person. Be polite, nod and listen to what she says- and she may even say some very interesting things and lead you into a fascinating conversation- and use normal socially acceptable excuses to get away, such as, "It's been lovely talking to you, but I really must go finish my report, I'm already late."
Whatever you do, do not indicate that you are afraid. They can sense your fear.

If your scared then there's really no way to deal with her directly. I would go to your teacher and ask to talk to her (possibly just you three) and tell the student if they do it again they will get drop'd. If you are the teacher find the procedure to drop someone out of your class, and once you have everything in place, give her a warning (this is really an unacceptable act, etc) and if she continues then drop her.

First get some garlic. Make a necklace and wear it around your neck. Then get a silver stake and stab her in the heart. Best to do this just before dawn since she'll have to be getting back to her coffin by daybreak, in case you miss the heart

Sit as far away from her as you can and definitely make sure you teacher knows about the problem.

Next time she does something in class stand up and start screaming and make a big scene -for example :
OH MY GOD YOU FREAK!!!!!YOU TRIED TO BITE ME!!! FREAK I'M CALLING THE COPS (this is a type of assault)
I'll bet she doesn't do it again!

Just say "If you are educated you know what is the meaning of being just like one!" I hope she'll be more scared to you by then. And i hope she'll quit that rude manners.

Tell her that teeth are for biting FOOD, not people! Tell her you are not FOOD, then give her a cookie if she is so hungry!
