Do I stop preparing one loaf after splitting the dough, refrigerating until ready to bake? Or should I just bake both loaves and refrigerate one, then microwave when ready to serve?

It won't hurt anything to cut recipe in half but, if you don't want to then proof dough once, not twice, poke it down and freeze.

wrap the dough you are not going to use (be sure to wrap very well) you can even triple wrap the dough. and set it in the freezer for up to 1 year. but, before you wrap the dough i would spray the dough with Pam to keep it from sticking ti the wrap when it thaws out.

Bake them both, then freeze the other for another day.

i just solve proportions .. because i had to do that with cookies. the recipe called to make 60, and i only wanted 20, so i did math.. as nerdy as it sounds. i dont know exactly how to explain proportions to you if you dont know them though
