I'm making a mexican meatball type soup called "Albondigas' and I wanna try red instead of white potatoes.Do they cook the same time in a soup? I add the regular potatoes the last 15 mins of cooking my soup. Thanx for your help..I need it ASAP as I'm cooking right now...lol... ;)it's 5:55 p.m. pacific here..... :)

Depends more on the size you cut them to .The red potatoes I use are smaller and I end up cutting them smaller as well hence they cook through more easily but not by much as to be readily noticable.
I will cook them first and cool them down before hand this cuts the starch unless you need it as a thickening agent.

I use red potatoes all the time and haven't noticed any difference in cooking time.

No they take a little less time to cook they are a softer potato

I haven't noticed a difference in cooking time. Poke with a fork to make sure they are done.
