I took the advice of several people on here and purchased a egg poaching pan insert. I boiled the water, and turned the heat to medium, put the poacher insert in, placed two eggs in the insert and covered. I watch them cook until the whites were done, but the yolks were mostly cooked. What am I doing wrong?

I tried the plastic wrap method...it was messy and made a poor shape for egg's benedict

You are cooking them too long. Once the water is boiling turn it to simmer, them place your egg tray into the pan and cover. Once the egg is almost white turn off the heat and and wait for a minute. The eggs will continue to cook after the heat is out and with practice you'll have perfect poached eggs.

All you need to poach eggs is a pot, eggs and a little white vinegar. Boil water at high heat and add a small amount of vinegar. Less than a teaspoon should be sufficient. Crack your eggs and drop them carefully in the water. Sometimes you can put the eggs in a small bowl or cup to drop them in. Turn down the heat to about medium and keep a careful eye on them to ensure they are cooked to your specifications. You'll be amazed at how the egg stays together and how much easier it is to control the cooking by turning the heat down a little. Follow these steps and you won't have any problem with your poached eggs.

Your water needs to be just steaming, with just a few tiny bubbles. If it's at a rolling boil, it's too hot, and it will cook the yolk. Don't ever let it come to a full boil. Take them out just before you think they're done, because they will continue to cook slightly until they cool

Heat too high and you're cooking too long.. Bring water to a boil, put eggs in buttered cups, cover turn off heat.

spray each cup with cooking spray light mist, 3/4 quarter fill of cup cover oh place a dap of butter ion top of egg before you cover ok with a light shade of white over the yolk done.. at least to my taste

Maybe the 'medium' setting was too high? The water should just be simmering.

cooked them to long, the lid shouldn't be on more then 30 seconds

You must add a few drops of vinegar so the eggs will coagulate.
