Boston Chicken Cranberry Sauce
Yield: 3 Servings

Ingredients


1 lb can jellied cranberry sauce
1 jar smucker's simply fruit
1 (10 ounces) orange
1 marmalade
1/4 ts ground ginger
2 c fresh cranberries -- each
2 pcs horizont -- (2 to 3)
1/3 c walnuts -- chop fine

Instructions

in 2-quart saucepan, over medium-to-low heat, use rubber bowl scraper
to stir together jellied sauce, marmalade and ginger until melted,
about 6-8 minutes. Add the sliced cranberries, keeping sauce on low.
Stir often. Continue cooking and stirring often until cranberries
are no longer white and taste tender to the bite (not soft, but not
too crisp). Stir in walnuts. When cooled to lukewarm, refrigerate,
covered and use with a week to 10 days. Should freeze well to be used
within 4 months.

Chicken Cutlets with Cranberry Sauce

1 lb chicken cutlets
Flour for cutlets
2/3 cup whole berry cranberry sauce
1 tbl orange zest
1 tbl lemon juice
2 tsp cornstarch
1 x chicken flavor cube or envelope
1/2 tsp salt
1 cup water

Flour and saute cutlets in oil. Remove chicken to warming plate.
When all are cooked, stir together cranberry sauce, orange zest, lemon juice, cornstarch, bullion, salt, and water (use same skillet). Cook, stirring constantly, until sauce boils and thickens slightly. Boil for 1 minute. Spoon mixture over cutlets.
This recipe yields 4 servings.

This original recipe called for chicken breast. I like it better this way.

Cranberry Orange Sauce With Ginger
2 Cups

Ingredients:

3/4 lb. cranberries
1 cup orange juice
1 cup packed brown sugar
2 tsp. grated fresh ginger

Preparation:

In a saucepan, combine all ingredients and bring to a boil. Reduce heat and simmer gently for 10 minutes, stirring occasionally. Cranberries will pop open and mixture will thicken.

VARIATION: Substitute 2 tsp. horseradish for the ginger; stir in after sauce is cooked.

CRANBERRY CHICKEN

1 (16 oz.)) can whole cranberry sauce
1 (8 oz.) bottle Henri's French dressing or equal (no low-calorie)
1 pkg. Lipton onion soup mix
1 (2 1/2 to 3 lb.) chicken parts

Combine in bowl cranberry sauce, salad dressing and soup mix. Rinse chicken, pat dry and remove skin. Arrange pieces in a 13x9x2 inch pan or baking dish.
Pour cranberry mixture over chicken and refrigerate for several hours or overnight, covering pan. Bake chicken uncovered in 300 degree oven for 1 1/2 hours, stirring glaze and spooning it over chicken several times.
