Not really. Our sources for substitution ideas recommend using light cream or half and half when you don’t have evaporated milk on hand — but that doesn’t sound like the direction that you want to head in.

Evaporated milk is normal milk in which the water content has been reduced and canned after that.
If you don't have evaporated milk, you can substitute 1 cup evaporated milk with:
2 1/4 cups whole milk, gently simmered until it is reduced to 1 cup
1 cup half and half
1 cup light table cream
1 cup light whipping cream
1 cup heavy whipping cream
If it a sweet dish, consider 1 cup condensed milk and reduce sugar.
If your purpose was whipping, your choice substitution should have a fat content of 30% or more, otherwise it would not work.

You could use heavy cream but it will add a lot of calories and fat. 2% milk is thinner than evaporated milk, your frosting would be runny if you used 2% milk. You might be able to reduce the milk to 2 oz until the frosting is just spreadable, but no guarantee it would work right.

Evap milk has half the water removed, so it's twice as strong as regular milk. In most recipes, you can use regular milk and if you have it, fortify it w/ a little powdered milk.

I think it's all a conspiracy! Think about it..if evaporated means dried up and gone then there can't BE anything in a can of evaporated milk! So my answer is to replace it with it!

Why would you want one? Evaporated Milk is the best in the land and comes to the table in a little red can. No teats to pull, no hay to pitch. Just punch a hole in the SOB!
