When a recipe calls for item to be placed on rack in middle of the oven, which rack would that be; "b" or "c"?

Either b or c may be used as the middle rack. The point of specifying in the recipe is to make sure the item is in a place where the temperature is even and air can circulate around it.

Use the B rack so that the food item will be centrally located in the oven.

I don't have an answer but have the same issue. This has been helpful or should I say reassuring as I usually use rack "b". Maybe I will start using "c" for cookies.

either/or they are both in the center so you pick depending on if you think it should get more or less heat. if you are baking bread or a cake for example id say c because you dont want to dry it out but if it is like a pizza rack b wll provide a crispier crust. so b or c depending on your personal judgement

Just eyeball it .. the racks slide in and out easy enough and you can have a look at both b anc c positions to decide, before preheating.

Staple the rack between "b" and "c". No really, I think b or c would work just fine. No significant difference.

main dishes like meatloaf and chicken can be placed on the lower one. I would put any bread items on the higher one to prevent burning.

For cooking temperatures 375 or lower, i use 'b'. For anything 400 or over, i use 'c'. Less chance of the bottom getting scorched.

you are going to have to experiment to find how the oven cooks on each level to suit your tastes.
