My best guess is that there are two reasons.....
One, beef is a bit expensive compared to other meats. "Liver", for example, could be beef or pork liver obtained cheaply from slaughterhouses (translate - "guts"). "Beef" in terms of cuts of meat would be very expensive.
Secondly, I doubt "beef" appeals to the buyer. Who is the buyer? More often than not a female cat owner is the one out buying the groceries. My experience with female cat owners is that they are not statistically likely to be into anything "beefy" and masculine. It'd be easier to sell them fish, liver, or chicken cat food.

They definitely make beef flavored cat food. However, I would not necessarily advise feeding your cat the brands mentioned here. Are you looking for canned or dry or both? First of all, I would recommend that you feed your cat premium food. Meow Mix and Fancy Feast are considered "grocery store" brands. They are manufactured with lower quality ingredients, meat 'by-products' instead of meat, and more fillers, such as grain. This is not desirable in a food for cats, because cats, UNLIKE DOGS, are obligate carnivores. This means that they REQUIRE a very high protein diet. They have very short digestive tracts, and it is not as easy for them to digest foods such as these. Also, they need to eat more of the lower quality food to come close to meeting their nutritional requirements. This means that you will find they produce more waste when fed grocery store food as opposed to premium food. I must also mention that cats have very different dietary needs than dogs. Please DO NOT attempt to feed your cat dog food. There is a reason why (good) cat food labeled as such and is so much more expensive per pound than dog food - it contains a higher proportion of protein plus certain vitamins, minerals, and amino acids required for optimum feline health. There are many premium brands of food out there, but I would suggest you go into your local pet store and ask for someone knowledgeable on the topic of pet food. Most of the dry foods are chicken based, but if your cat loves beef, you can feed him beef flavored canned food. I know that Pro Plan makes a canned beef formula, as do Iams, Nutro, and many others. If your cat doesn't seem excited about chicken or seafood dry food, you could even mix in some of the beefy canned food. However, you should not feed a healthy cat a diet of only canned food. Please use the dry food as a main diet. Cats in the wild would be hunting and killing their own prey. These prey contain plenty of bones and cartilage to bite through. Biting through this tough material and the meat itself provides exercise for the gums and keeps down plaque. A housecat being fed only canned food does not have access to this natural 'toothbrush' and is very prone to poor dental health. I hope this helps!

You should be able to find something beef flavored in the canned/wet food. Not so sure about the dry food though.

If you were to taste raw beef, raw chicken, raw lamb, raw pork you would not find a great deal of difference in the taste. When early man started eating meat he found that cooking it (carmelization of meat was tasty to him because we have more sugar receptors on our tongues than cats do) made it taste better. Salt and spices also improved the flavor of meat and helped in preserving it for future.
Leopards take their kill up into trees and munch on it for many days in the extremes of African heat. That meat would make us gag and get sick.
I feed my cats a raw meat diet. Beef was the only meat that was thrown up and most of the cats just wouldn't eat it. So I use chicken and turkey for their food.
I use some Wellness canned food - they have a beef and chicken combo. None of my cats likes it.

I'm not sure where you shop for pet food but they do make beef flavor food for cats moist and dry

Sure they have beef cat food. It's icky but cats love it. Just check at the grocery store or Walmart, it's everywhere.

huh? Friskies, Whiskas, 9 Lives ets all have beef food for cats...as for kibble...well I think the flavors get pretty mucked up in the manufacturing process...

They do make it. Friskies has canned beef in gravy. It's not the best brand to be feeding your cat, but it does exist.
