It's brand new, and hasn't been opened... it expired october 16, 2005.. It's needed for my main course and I need to know if it's okay to use!?

No, the oil may be rancid.

Also, if it has any garlic in it, there is a risk of botulism.

One can easily make their own basic salad dressing by mixing olive oil with vinegar or lemon juice.

DO NOT EAT IT!!!

Salad Dressing is not VACUUM sealed. Most come with the press on anti-temper foil...that is not VACUUMED sealed...Which is a common mis-claimer....The seal is similar to milk(the white on top foil on bottom) type: It appears Vacuum sealed because The Product creates a small vacuum.

I would say no. Even though it has never been opened, it doesn't mean that bacteria hasn't grown within the bottle. Plus, it may have a stale taste to it. I wouldn't recommend you eat that.
