Classic Meatloaf

Ingredients:

1-1/2 pounds ground beef
1 can (8 ounces) tomato sauce
1 cup soft bread crumbs
1 egg
1 small onion, finely chopped
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
Topping
1 tablespoon packed brown sugar
1 teaspoon dry mustard

Procedure:

Heat oven to 350°F. Measure 1/4 cup tomato sauce, combine with topping ingredients in small bowl.

Set aside.

Combine remaining tomato sauce with remaining meatloaf ingredients in large bowl, mixing lightly but thoroughly.

Shape beef mixture into 8 x 4-1/2-inch loaf on rack in broiler pan. Spread topping over meatloaf.

Bake in 350°F oven 1 hour to medium (160°F) doneness, until not pink in center and juices show no pink color.

Let stand 10 minutes before cutting. Cut into slices.

Makes 6 Servings

Cook's Tip: To make soft bread crumbs, place torn bread in food processor or blender container. Cover, process, pulsing on and off, to form fine crumbs. One and one-half slices make about 1 cup crumbs. To save time, and for a different presentation, beef mixture may be divided evenly and shaped into three 1-1/2-inch thick loaves. Place on rack in broiler pan, spread topping evenly over loaves. Bake in 350°F oven 40 to 45 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color.

Meatloaf
750 g beef mince (depending on the amount of people being fed)
1 cup breadcrumbs
1 teaspoon curry powder
1 egg
1 onion (finely chopped)
milk (enough to make the mixture very moist)
Sauce
1 cup tomato sauce
1/4 cup Worcestershire sauce
1 teaspoon coffee
1 teaspoon butter
1 tablespoon vinegar
1/2 cup sugar
1/2 cup water
3 drops lemon juice

MEATLOAF:.
Combine all meatloaf ingredients except the milk in a large bowl (I find this is easiest to do with hands).
Add the milk until the mixture is very moist
Form the mixture into a loaf shape and place in a baking/casserole dish big enough for the loaf to fit with additional room.
Place into 180º pre-heated oven for 30 minutes. Then pour sauce over meatloaf ensuring the entire surface gets a coating of sauce and replace in oven for another 30 minutes.
Remove from oven and serve.
SAUCE:.
Combine all ingredients in a saucepan on a medium heat until it just begins to come to the boil.
Pour over meatloaf.

I cut up a whole lot of carrot, green squash, onion, mushroom, and some red and yellow bell pepper, really reeeeeally tiny (takes a little time, but is rewarding). I mix this in with my ground beef (do get the 90/95% fat free if possible)You can buy packets of meatloaf seasoning mix. Prepare this (add water), having selected the right amount to correspond with the amount of ground beef you're using. Pour this over your gr.beef/diced veg mixture, then blend well (I just do it with my hands). Transfer it to an oven dish, cook medium heat till the loaf is just beginning to pull away from the sides of the dish, take out and score a line down the center and pour a little Heinz 57 into the score line. Return to the oven for another few minutes , then test for doneness.
But, guess what! If you have a microwave dish you can cook your meatloaf in there at about half power, checking for "nearly done" after about 20 minutes, putting your sauce on, and returning to finish it. I always get "Oooh's and Ahhh's)

Quick Meatloaf:

1 lb. lean ground beef
10 Saltine Crackers, crushed (about 1/2 cup)
2 Tbsp. Dijon Mustard
1/4 cup ketchup



Preheat oven to 375°F.

Mix meat, cracker crumbs and mustard until well blended.
Put meat mixture into 8-inch loaf pan. Spread meat loaf with ketchup. Bake 40 min.

You can also sprinkle with cheese and bake 5 more minutes if you like cheese.

This is a quick, easy meatloaf that tastes good. (And makes great sandwhiches the next day).

"Down-Home Meat Loaf" - 8 servings

2 eggs; beaten
1/4 cup milk
2 cups soft bread crumbs
3/4 cup finely chopped onion
1/3 cup finely chopped green pepper
2 tbsp. prepared horseradish
1 1/2 tsp. salt
1 tsp. ground mustard
2 lbs. ground beef
1/4 cup catsup

In a bowl, combine first 8 ingredients; crumble beef over mixture and mix well. Press into a greased 9x5x3" loaf pan. Bake at 350* for 1 hour. Spread with catsup; bake 15-20 minutes longer or until a meat thermometer reads 160* and meat is no longer pink. Let stand 10 minutes before slicing.

Amish Meatloaf

2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon
1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

Everyone RAVES over this, and there's never any leftovers. It makes a big one, so you may want to freeze half of it before baking.

3# ground beef; 1 envelope onion soup mix; 2 eggs, slightly beaten;1 cup instant oatmeal; 1/2 cup ketchup.
Mix everything but the meat until well blended, then add meat & knead until well mixed. Separate into 2 equal portions if you plan to freeze it. Shape into a loaf, and bake in a pan with deep sides (9x13 works well).
Bake at 375 for about an hour, let stand 10 minutes before cutting.

for super easy meatloaf that tastes awesome

mix 2 eggs
2 lbs of ground beef
1 pkg of stove top stuffing for chicken
1/4 cup of Kraft BBq sauce, any flavor but Onion is awesome!

mix together, place in loaf pan for 1 hour at 350 with a 1/4 of bbq sauce on top for glaze and ta da!

My kids love this!

1/3 cup grated Parmesan
2 teaspoons Worcestershire sauce
2 large eggs, beaten
Gravy:
1/2 medium onion, diced
3 cloves garlic, smashed
1 teaspoon dried oregano
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
3 tablespoons tomato paste
1 bay leaf
1 (15-ounce) can low-sodium chicken broth
1 (15 1/2-ounce) can crushed tomatoes
1/4 cup grated Parmesan
1 teaspoon red wine vinegar
1 teaspoon kosher salt
Freshly ground black pepper


Preheat oven to 350 degrees F.
Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the olive oil, onions, garlic, oregano, salt, and pepper to the skillet and cook until onions are tender, about 8 minutes. Let cool slightly.
