Cooks and assistants
In larger kitchens, each station chef would have cooks and assistants (commis) that help with the particular duties that are assigned to that area. With experience, assistants may be promoted to station cooks and then to station chefs.

Basically a commis chef is an underpaid young person who just prepares the salad, boils eggs and adds mayo, grates the cheese, butters bread/rolls and peels veg etc etc - you get the picture. ie: A scivey that works hards for a living and doesn't earn much money but makes the owner rich!!

Trust me on this one cos IT'S SO TRUE!!!!
