Being a paramedic, I have actually seen brain matter (I will leave it at that, you don't want the gruesome details) but it IS indeed a grayish color, somewhat similar to the color of silly putty.

The brain is mostly gray - the brain is composed of gray matter and white matter. Gray matter is where brain activity occurs, and white matter is arranged in nerves that transfer impulses.

it is a light pink color, but when cooked it is white.....
i know this from seeing autopsy videos.
