3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda
In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.

This is how I like mine, warning it bites.
2oz golden rum
about 14 mint leaves
1 heaped teaspoon of good brown sugar
1/2 a lime
put everything apart from the rum into a shaking tin and muddle (crush) it until the sugar has dissolved and the limes have sacrificed thier juice, add the rum and a good dose of ice and then shake the hell out of it, strain into an ice filled glass.
I know this isn't the conventional way but adding soda makes it lose a lot of taste I think.
For something a bit different add into the muddling process
a passion fruit
or
some mango
or
strawberries
or
any berry fruit really

traditionally its
2 oz white rum
2 dashes of bitters
1 tsp super fine sugar
2 spearmint leaves crushed
1/2 oz lime juice
club soda
fill glass with ice add all but soda mix then fill glass with soda
Easier more Americanized version
1 oz white rum
1 oz spearmint schnapps
1 oz triple sec
1/3 lime juice
club soda
mix first 4 together fill glass with ice add mixture and fill with club soda
Enjoy!!

The key, IMHO, is brown (not white) sugar. I also use mint extract right in the drink, in addition to fresh mint.
