with all these great knives available these days, i am confused. do i get the whole set? or just some main individual ones?

If you can afford good knives, get some Cutco knives. A demonstrator came to my house and all he succeeded in doing was to make me hate my knives. I checked Ebay right after he left and they do have quite a few offered from time to time at a substantial savings.

A complete knife set is nice to have. You will want 6-8 steak knives, a bread knife and 2-3 more styles of knives and maybe a sharpener. The wood block that usually comes with sets is also attractive and very useful. Unless you have money to burn, I would suggest getting generic brands instead of the expensive ones. A major department store like Macy's has a great store brand always available, and as Xmas approaches I will bet you can find a nice set on sale.

Top quality forged: get Theirs-Issard, Sabatier. They are more comfortable than the typical german style knives everyone else has, easy to use and to keep sharp. Hand made and more affordable.
Top quality stamped: get Forchner-Victorinox. These are the most popular knives in the food service and fishing industries. Made by the Swiss army knive company, excellent quality at a really good price.

Get a whole set - its cheaper that way. Get JA Henckels knives - they are great for a great price if you find the right store, or on sale.

I agree with the poster who suggested Henkels. I dropped one on our ceramic tile floor and broke the tip off of it. They replaced it free.

Kitchenaid stailess steel. I registered for them at bed bath and beyond. I can't tell you how much I love them. Inexpensive...only $100 for the set. Looks good in my kitchen too.

Get the whole set, then you won't have to worry about not having the right size knife on hand.
