Banana Caramel - Easy and delicious. Ingredients Bananas (doesn't matter how many you use) 100g dark chocolate 50g butter 1 1/2 cup white sugar 1 cup water whipped cream to serve 1) Get 100g of dark chocolate and 50 grams of butter. Heat over a double boiler (you should have one, otherwise get your saucepan half fill with water and place a heat safe bowl over top and cook your chocolate in the bowl). Stir constantly so that the melted chocolate and butter form a smooth paste. 2) Dip whole bananas into the melted chocolate.Dip them so the chocolate coats one half and the other half is plain. Put these in the frisge and let the chocolate set (won't take long, only 15 minutes. While you wait for them to set you can do the next step). 3) Get 1 1/2 cups of sugar and put in a pan with 1 cup of water. Turn heat on to low/medium and stir until the mix goes like honey (should be the same colour and consistency after about 5 minutes). 4) Pour the caramel over your bananas and serve with whipped cream. Almonds can also be sprinkled over the top if you want. So you only need a few ingredients and half an hour and it's done.

How about mango bread? You can find mango in most grocery stores (well, here in California, at least...) such as Ralph's, Von's, Albertson's, etc. Anyway, here is a recipe:

Mango Bread

2 cups flour
2 tsp. baking soda
1 tsp. salt
1 cup sugar
1 tsp. cinnamon
1/2 cup raisins (OPTIONAL)
3/4 cup vegetable oil
3 eggs
2 chopped ripe mangos
1 tsp. vanilla extract

Mix all ingredients well. Pour into greased pan. Bake at 325 degrees F. for one hour. Cool for 20 minutes.

Slice the bread after it cools, and people can just grab a slice from the pan. No need for forks or spoons or other utensils, though a napkin will come in handy. Or you can pour the batter into muffin cups and make mango cupcakes. But you may need to adjust the cooking time to take into account the fact you are making cupcakes rather than a traditional loaf.

I was first introduced to this dish by a friend after he spent a month in Hawaii. He said they had this every where. I make this dish during the summer months and serve over a spinach salad. It’s very light yet filling.

Poki

1 lb fresh ahi tuna (must be Sashimi Grade)
1/4 cup red onions, finely minced
3 green onions, chopped fine
1 tablespoon fresh ginger
3 tablespoons light soy sauce
3 tablespoons rice wine vinegar
1 tablespoon sesame seeds, toasted
3 tablespoons lemon juice, fresh squeezed
1-3 tablespoon roasted sesame oil

1.Blend all ingredients EXCEPT the tuna in a non-reactive bowl (no metal! Glass is best).
2.Mix well, taste and season, adding salt and pepper as necessary.
3.If you like you Ahi raw move on to the next step or lightly pan sear the Ahi on both sides before moving on to the next step.
4.Cut tuna into small, uniform bits approximately 1/2 inch square.
5.Gently toss the tuna in the dressing and let sit in the refrigerator for 30 - 60 minutes.
6.Serve as an appetizer.
7.Serve as a salad over spinach.
8.A note on the ingredients-- this is a raw fish dish, so it's very important to get sushi/sashimi grade tuna from a reputable seafood supplier.
9.As you prepare the fish, make sure that your utensils are very clean and cool or cold.
10.Poki doesn't keep well, so make only as much as you're sure to eat in one sitting.

Well I don't cook much authentic foods, I am do more eclectic California cuisine. With that said my best tropical dish is also my simpliest. It is seared mahi mahi, done so until opaque, then a grilled pineapple and mango salsa, with orange-sesame asparagus, which you make simply by boiling the asparagus with orange zest and sesame seeds. Very simple and very quick--but sure to impress.

Hawaiian Chicken Salad

6 boneless, skinless chicken breasts, cubed
3 cups mayonnaise
1 tablespoon curry powder

In a separate bowl, stir together mayonnaise, curry powder, lemon juice, and soy sauce.
Stir into the chopped chicken 2 1/4 cups of the toasted almonds. Stir in grapes, celery, water chestnuts, and pineapple. Gently fold in all but 1/2 cup of the dressing. Cover, and refrigerate salad and reserved dressing for several hours (or overnight).
Before serving, adjust dressing to taste, and garnish with paprika and remaining 1/4 cup almonds.
