Call you local butcher they should be able to tell you how long and at what temp! I have cooked a 3 lbs roast for about 2 hours @ 350 degrees. I also use a meat thermometer to see if the meat is done usually about 180 degrees. You can also cook the potatoes, onions and mushrooms in the roasting pan with the meat.. Sounds like a tasty meal. IF this doesn't help you out try this link.

Put the roast into a pan add a can of tomatoes if you have it, or about a cup of water if you don't. Cover and bake for about 2 hours on 325. After the first hour add the onions and pototoes and mushrooms, continue cooking for about another hour. Uncover the last half hour. Roast should be very tender when pierced with a fork and pototoes will be roasted golden brown. The juices from the tomatoes and the roast will flavour the pototoes. Yumm

You need a big cast iron skillet....then use a mixture of shortening & onion soup mix (mix it together) & spread over roast. Cook it at 375...it will probably take an hour to an hour and a half to cook. Cook the potatoes, onions & mushrooms on the side of the roast in the skillet pan.

Okay....Salt and pepper the meat. Heat a 3 quart pot until very hot. Add 1tbsp oil, and sear the roast on both sides.

Toss in 1 onion, cut in quarters, a clove of garlic cut in half, 1 small tomato cut in quarters, and 2 cups water. Cook on low heat, covered, for 1 hour.

Turn meat, add 2 potatoes cut in quarters and two scraped carrots cut in half to pan, and cook another 45 minutes. Add sliced mushrooms and cook 10 more minutes covered. Done.

Buy a Reynolds (the people who make foil) bake-in-bag. Put roast, 2 cans cream of mushroom soup and 1 can water, salt & pepper. Tie off bag and poke holes in top. Bake according to directions. (minutes per pound) May want to add a little extra time since you're adding a thick soup. It is wonderful!!!!!!!!!
