I've never tried it. My recipes all call for evaporated milk. Half and half and whole milk would not be as sweet. Also, evap milk is thicker. Your pie may turn out runny and/or not set up as well.

If I was in your position, I'd opt for the sweetened condensed milk along with a small amount of the skim milk so the milk portion equals the amount of one can of evaporated milk, and only add approx 1/4th the amount of sugar recipe calls for as the sweetened condensed milk is very high in sugar. and be sure to add at least 2 eggs for each pie. I think your pie will be delicious. It will also be very rich and shiny. You're doing what every great cook has done throughout the ages, substituting one ingredient for another, and necessity is the mother of invention. Sometimes the substitution is better than the original.

I always use this recipe when I make pumpkin pie.

One-Bowl Pumpkin Pie

1 3/4 cups canned pumpkin
1 can (14 ounces) sweetened condensed milk
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon each of salt and ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup hot water
standard pastry for 1 crust 9-inch pie, unbaked

Put all ingredients except pastry in bowl and beat until blended. Pour into pie pan lined with pastry rolled 1/8 inch thick. Bake in preheated oven (375 F) for 45-50 minutes. Makes 6 to 8 servings.

You can use 2/3 cream and 1/3 milk. Half and half will be a bit light.

My Recipe calls for sweetned condensed milk, and no you can't substitute evaporated milk for it.

Sweetened condensed milk is a concentrated blend of evaporated whole milk and cane sugar, condensed by a special vacuum cooking process. It is entirely different from evaporated milk and one cannot substitute evaporated milk for sweetened condensed milk in a recipe.

If the recipe calles for undiluted evaporated milk then that is what you shoud use. If the recipe calls for whole milk then just add an equivalent amount of water to the evaporated milk and you have whole milk.
