say I ate 1000 calories each day but then start eating 500 if I keep on doing that will my body adapt to the 500 ... if so wouldn't the best diet be a random calorie diet?

You should never eat less than 1200 calories to begin with. Then, to eat only 500 would be starvation! Why would you do that!? An infant needs more caloric energy than that! But to answer your question, yes, your body would adapt. I just hope you would never eat so few calories. Find out how many calories your body needs to maintain or lose weight based on your current body weight. You can find this info by googling "online caloric need calculator" or going to a site such as prevention.com or amifat.com

Gaining and losing weight is how the body adapts to different calorie intakes. Dying is how the body adapts to extreme malnutrition. . . or, rather, fails to adapt. You need a certain minimum amount of both calories and essential fat.

Your body will adjust as much as it can, but try living on only 500 calories a day and you can pretty much guaruntee your body will waste away. Your body needs a bare minimum of caloric intake to maintain natural body and brain functions, and replenish what it uses. 500 is not enough, so your body will eventually cannibalize itself. Look at pictures of anorexic wasting to see what I mean.

Yep it is true just like your body can adapt to an exercise program. If you do not change the intensity of your workouts they no longer have an effect you hit a plateau

That's false.

Your body responds to whatever you feed it. People who are normal weight eat roughly the same calories every day and that's how they maintain that weight.

The same for overweight people. Nearly all of us eat about the same calories every day, whether 1200 or 3200.
