Cook the bacon first, really crispy. Then, sautee the garlic in olive oil until it's just barely cooked, then add the green beans, and when they're almost done, add the bacon. Yummy!

Use the fresh French Beans Haricot Vert. They are thinner and will cook faster. They won't be "green" tasting. Chop bacon and cook until brown. Drain the oil off. Using the same pan, do not rinse the bacon grease out and add a little olive oil and garlic. Slightly cook the garlic and then add the green beans and toss together coating the beans with the mixture. Cover the beans and cook about 10 minutes. Add bacon right before serving. Yummy!!!

You clean and cut down the green beans to the size you want. Place them in a pot with a small amount of water (depending on how much beans are in there) and some butter. Simmer them for a while. While simmering the green beans I always half way cook the bacon to make sure it will hold together an be done. Add the bacon and garlic to the pan with the green beans and continue to simmer until done. I also add cubed potatoes to this same pot and it is delicious!

Baked Garlic Bacon Green Beans

1 (14 1/2 ounce) can green beans, drained
2 tablespoons chopped onions
1 tablespoon olive oil
2 tablespoons grated parmesan cheese
1 garlic clove, pressed (2 cloves turns out REALLY strong)
2 tablespoons cooked chopped bacon

In a casserole dish big enough to hold everything, pour the olive oil.
Add the green beans and toss well.
Add the bacon, onion, garlic and toss well.
Add the parmesan and toss well.
Bake 400 for 20 minutes.

Green Beans in Garlic Sauce and Bacon

1 pound green beans, whole

2 tablespoons butter, or margarine

1 teaspoon minced garlic
3 slices Bacon
salt and pepper to taste

Over medium heat, boil the bacon and green beans in a 10-inch skillet, until they are just tender.

Drain the beans and return to the skillet.

Add the remaining ingredients and cook for an additional 2 or 3 minutes.

Wash the beans and cut in half if desired and put in lightly salted water and boil until tender then drain. Fry up some smoked bacon with whole garlic cloves and when beans are done crumble the fried bacon over and into the drained beans and add the fried garlic. Drizzle the bacon fat over the beans too if you don't mind the extra cholesterol but the flavor is fantastic.

I use the jarred bacon pieces (less mess). As noted above, saute minced garlic in olive oil, but I add the bacon with the green beans, so they pick up some of the bacon flavor. Also, sea salt and pepper to taste, as fresh green beans are a little bland.

Fresh Green beans with bacon: Bring a pot of water to boil put a lid on it that will make it come to boil faster. Salt the boiling water and drop your beans in. Let boil on high for about 8 minutes. Drain beans. In frying pan cook bacon until crispy, remove bacon, you may need to decard some of the fat from the bacon drippings you only need about 2 tablespoon of drippings. In the frying pan with the drippings add diced garlic and I add a little diced onion, cook until tender, add chopped cooked bacon and green beans in frying pan and toss, let simmer for 5 minutes. Add a pinch of sugar at the end and toss. Hope you enjoy!

Fresh snap beans rinsed and "snapped", cover with water in a good size pot, add 1/2 tea salt (cause the bacon is salty). Add your garlic, chop the bacon in 1" pieces and if you like onion (which I do) I usually put in a small chopped one. Now the good part...1 tea. of sugar or pancake syrup...yep..it will make the whole thing yummy and take any bitterness out of the beans. Also, in New Orleans, we put in new potatoes, or regular potatoes chopped up. Now put a lid on it and boil them, then simmer for about an hour. OH YEAH...now you're cooking with gas!!!! Godloveya!

Boil beans for 5 minutes then give a cold water bath.

Fry the bacon tender crisp and add in the garlic. Cook until garlic just tuens brown. Add beans until warm.
