breakfast: ligh english muffin with fruit spread
lunch: peanut butter and light jelly on light whole wheat bread and cheez-its and carrots

is that enough or should i eat more or less?

No, honey, you need more protein and more actual vegetables in your diet.

You're better off having the apple with peanut butter for breakfast, then go with a salad for lunch (if you're trying to eliminate calories, leave off the dressing).

Cheez-its aren't a very good option, as they're pretty high in fats, as well as sodium. Additionally, any carbs you put into your body will eventually turn into sugars, so you're best off getting whole grains, that take more energy to process. Maybe you could try half a slice of whole wheat bread with peanut butter on it as a snack.

Perhaps a chicken breast on top of a green salad for dinner...

Yes, you need to eat more, try 5-7 small meals with about the same calorie content for each meal. I'm assuming that your a female? Even if dieting you need at least 1200 calories per day.

Are you eating dinner? Those are really light meals. It is best to get at LEAST 1200 calories a day so your metabolism doesn't slow. You're only getting about ... 700 or so. You can use http://www.my-calorie-counter.com to get the exact calorie count of your foods.

Depends on you height and weight. I think a little bit more would be good idea.

no it is not a healthy diet you need more fruits and veggies as well as more calories
