It depends on where you buy them. The more Gourmet style shops like Bristol Farms and Whole foods will have Black Olives in glass bottles as the tin taints the olive leaving a metallic taste. The standard stores only carry canned because no one has requested the glass bottled by brand yet.

They don't. I often buy all different varities of Black Olives at my local Wild Oats - they are in an open bin, not cans.

I've seen them in jars, and olive delis where you scoop them into a container. They're not always in cans.
