Butter has a more solid consistency than margarine. This consistency is needed for rolling out cookie dough, and also helps the dough maintain it's shape when it is cooked. Unsalted is due to the fact that cookies require only a small amount of salt, the additional salt can affect the taste.

I have found that when using salted butter in recipes the salt stands out a little more then when using unsalted. I buy salted butter because it lasts longer than the unsalted kind. What I do is reduce the amount of salt called for in a recipe. I hope that I have been some help to you.

Salt is added ato butter to keep it from spoiling as fast. Each manufacturer of butter adds different amounts. Usually the amount is not enough to make much of a difference...especially if it is a spiced cookie. I have never had a problem using salted butter instead on unsalted in any recipe except for bread as salt inhibits the growth of yeast.
