My son is allergic to just about everything possible. Some cake ingredients that i can think of off the top of my head would be- eggs, milk, peanuts, soy, cherries, pinneapples. Last year we found a recipe for chocolate cocoa cake with a melted marshmellow topping. It was good, but it wasn't the best. I hear about cakes and brownies made with Coke. Is there a good recipe out there without one of the listed ingredients that i could make. His Birthday was yesterday and we are celebrating it tomorrow so i need to hurry

Try these recipes. The cake tastes so rich it's hard to believe there's no fat or eggs in it. We prefer it chilled, but it can be served at room temperature, or even warm, if you can't wait. It will keep for several days (but not in my house!), but DO NOT FREEZE. If you do, the pudding will turn very watery.

CHOCOLATE PUDDING CAKE

1 c flour
2 T apple sauce
1/2 c water
1/8 t salt
2/3 c sugar
1 t vanilla
2 T cocoa
2 t baking powder
2/3 c brown sugar
1/4 c cocoa
1 3/4 c hot water
Mix the first eight ingredients together. Pour into a sprayed 8" square baking pan. Mix the brown sugar and 1/4 c cocoa. Sprinkle over the batter. Pour the hot water over the entire top surface. Bake at 350 for about 45 minutes. The topping sinks through the cake to form a pudding layer at the bottom.

Brownie Oatmeal Cookies (Originally from The Mormon Diet Cookbook)
2/3 cup whole wheat flour
1/3 cup sugar
1 cup quick cooking rolled oats
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt, (optional)
1 each powdered egg substitute, (11/2 tsp. mixed with 3 TBS water)
1/3 cup corn syrup, ,light or dark
1 teaspoon vanilla
Mix egg replacer, vanilla and syrup. In separate bowl, mix dry ingredients, make a well, add liquid and stir till moistened. On a spritzed baking sheet, form approx. 2 dozen cookies. Bake at 350F for about 10 minutes Cool on sheet/wire rack for 5 minutes or so.

I got this one from my grandmother. She hasn't made it in a while, but from what I remember it was great. She said that it was better without the marshmallows, though.

1 cup butter
1 (14 ounce) can sweetened condensed milk
2 3/8 cups self-rising flour
1 1/8 cups unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 cup Mini marshmallows (optional)
1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage

1 Preheat the oven to 350 degrees F (175 degrees C). Butter and dust with flour a 10 inch bundt tin.
2 Cream the butter or margarine till light and fluffy. Beat in the condensed milk. Combine the flour, cocoa powder, marshmallows (optional), baking powder, and baking soda; mix into the creamed mixture alternately with the cola.
3 Bake for 45 minutes, or until the cake tests done.

1/2 cup Margarine
3 tb Cocoa
6 tb Coca-Cola
1 lb Powdered Sugar
1 c Pecans, chopped

Frosting: Bring margarine, cocoa and Coke to a boil. Boil a minute, remove from heat and gradually add sugar. Stir in pecans.

Coca~Cola Cake

a.. 1 cup Coca-cola
b.. 1/2 cup vegetable oil
c.. 1 stick margarine
d.. 3 T. cocoa
e.. 2 cups sugar
f.. 2 cups flour
g.. 1/2 tsp. salt
h.. 2 eggs
i.. 1/2 cup buttermilk
j.. 1 tsp. baking soda
k.. 1 tsp. vanilla
Preparation -
In a saucepan, combine Coca-Cola, oil, margarine, and cocoa. Bring to a boil, over medium heat, stirring constantly. Remove from heat and set aside. In a large bowl, mix together sugar, flour and salt. Add the mixture from the saucepan and beat well. Add eggs, buttermilk, soda, and vanilla, then beat well. Pour into a greased and floured sheet cake pan. Bake at 350؛ for 20 to 25 minutes.


Frosting for Coca-Cola Cake

a.. 1/2 cup margarine
b.. 3 T. cocoa
c.. 6 T. milk
d.. 1 tsp. vanilla
e.. 3/4 cup pecans - chopped
f.. 1 lb.confectioners sugar

Preparation -
In a saucepan, combine the margerine, cocoa, and milk. Heat over medium heat until the margerine melts, while stirring to mix together well. Add the remaning ingredients and beat hard. Spread on the cooled Coca-Cola Cake.

Coca-Cola Cake & Frosting

* 2 cups sifted all-purpose flour
* 1-1/2 teaspoons baking soda
* 1 teaspoon salt
* 1-1/3 cups sugar
* 1/2 cup cocoa
* 1/2 cup shortening
* 2/3 cup buttermilk
* 2/3 cup Coca-Cola
* 1 egg
* 2 egg yolks

Preheat oven to 350°F. Grease and flour two 9-inch cake pans.

Into a large electric mixer bowl, sift together the sifted flour, baking soda, salt, sugar and cocoa. At low speed, add the shortening, buttermilk and Coca-Cola, and mix for 2 minutes, scraping sides of bowl as needed.

Add the egg and egg yolks, and continue to beat for 2 minutes.

Pour batter into prepared cake pans. Bake at 350°F for 30 to 35 minutes, or until cake tester comes out clean. Cool and frost with Coca-Cola Frosting or frosting of your choice.

Coca-Cola Frosting:

* 2 egg whites
* 3/4 cup sugar
* 1/3 cup light Karo syrup
* 1/3 cup Coca-Cola
* 1/4 teaspoon salt
* 1/4 teaspoon cream of tartar

Combine all ingredients in top of double boiler. Cook over rapidly boiling water, beating continuously with a portable elctric mixer, until mixture stands in peaks. Remove from heat, and continue beating until thick enough for spreading.

Note: Do not use Diet Coke for this recipe, please. If you're trying to cut calories, this isn't the place to do it.

instead of eggs you can substitute egg beaters from your dairy section in the grocery store. instead of milk, sustitute lactose free milk

They don't list any with coke, but you could use it to replace the water, then just put a little less sugar and a little more flour in it (you want to keep the proportion of wet/dry ingredients the same).
If it was me, I would probably just follow their recipe, then experiement the next time I made it :-) good luck - hope this helps and that he enjoys his special day and the cake

Do a web search for "Coca-Cola Cake" It really is good and uses Coke for the sweetner.

One cake mix, one can of coke, one egg white, mix gently and bake for 35-40 minutes
