I have a baby shower potluck at work tomorrow and have no idea what to bring. I'm getting a little sick, though, so I'd rather not make something that requires much work (don't want to infect the food). It has be able to survive a 1.5 hour commute as well. I'm okay with buying something, but the desserts are already covered by other people. Any ideas?

Mini Bagels & Apple and/or Banana Slices with Dip

Dip:
1 jar marshmellow fluff
1 pkg cream cheese (can used flavored)
- blend together and spread on bagels
- can place fruit on bagels or just spread dip on them separately

Ever done a Beef Rollup with a filling of stuffing mix, and few fine chopped vegetables - onion, carrot, mushroom green squash" Have the Meat Department slice you some really nice lean beef - biggest square area possible - you probably will need two slices for one rollup. Not TOO thin because you need to pound it a little bit to flatten and tenderize it more. Get some regular stuffing mix and make up from directions. Chop your onion, carrot, mushroom, green squash into the smallest pieces you possibly can. Sautee these very lightly in the least little bit of oil, and blend it in with the stuffing mix. Spread it - not TOO thick -on to your laid out slices of beef (edges overlapping a bit), Roll up like a sponge roll, tie with string. Put in an oiled baking pan, and spray lightly with Pam or other spray. Medium Oven, and get in there every little while and give it a turn so a different surface is resting on the pan. When it's just nicely brown all round the outside of the meat, it should be ready to take out and leave to cool. When you get where you're going you can carefully cut into slices and serve cold with a little relish or something. The slices look pretty, are yummy, and it does look like you might have slaved over a hot oven LOL.
One other tip - if you are using a less expensive cut of meat for this, after you have gently pounded it flat on a piece of parchment paper, pour a little marinade on it and spread it over the surface, then gently roll it up in the paper, lay it in a dish, and let it chill in the fridge for a couple of hours.

BEAN DIP 16 oz Kidney beans, drained 1 medium Onion, chopped fine 1 small Green pepper, chopped fine ¼ cup Sweet relish (Cain’s) ¼ cup Ketchup ¼ cup Mayonnaise (NOT light mayo) Dash Dry mustard Dash Worcestershire sauce 1 tsp Horseradish (or more to taste) 2 cloves Garlic, minced 1. Mix all together well 2. Chill several hours 3. Serve with crackers or thinly sliced French bread Delicious! Cheap and easy. Good at room temp (but not for very long, it has mayo in it)

How about a chick pea salad like those served at salad bars in restaurants?
2, or more cans of chick peas drained & rinsed.
A couple of good sized onions sliced thinly
1/4 cup cider vinegar.
1/4 cup sugar.
Heat the sugar & vinegar on stove til sugar melts, mix it good, pour it over the chick peas & onions, mix & refrigerate mixing again from time to time. This can be made the nite before ( or a couple of days before).

Stroganoff Meatballs
1 can (10-3/4 oz.) 98% fat free condensed cream of mushroom soup
1/2 cup milk
1/4 cup finely chopped onions
2 Tbsp. chopped fresh parsley
1 pkg. frozen meatballs

COMBINE all ingredients except sausage in medium saucepan. Bring just to boil on medium heat, stirring frequently. ADD sausage; cover. Reduce heat to medium-low; simmer 5 min. or until sausage is heated through, stirring occasionally. SPOON into slow cooker set on LOW heat to keep warm until ready to serve.

Baked beans with those little smokie sausage in them. Jazz them up with a little chopped onion and about 1/2 cup of BARBQ sauce and a tea. sugar. Put it all in a pan (or a crock pot) and take either one on to work in the morning. Godloveya.

How about a rotisserie chicken in an insulated cooler? Bought at the deli. I'm sure if you explain to your coworkers why it's bought food, they'll TOTALLY understand why you didn't want to take a chance on making them sick.

pistachio pudding is easy. you take pistachio pudding, whip cream, canned fruit and mix it together kinda like fruit salad.
