A gift in return for a gift can be a slippery slope and might lead to an uncomfortable cycle of "thank-you" gift giving. However, nothing is more appropriate than a well picked and well thought out card to express your thanks for her thoughtfulness. I suggest you go to www.quotationspage.com and pull out a nice quote about giving. This will show that you really took the time to think about her actions.
And when her birthday rolls around, yes - it would be perfectly appropriate to give her a small token as a remembrance of her gift.

Give her a thank you card or a small statue of an angel for most christians believe in the angels watching over them. It is the thought that matters though not the gift.

Perhaps you can give her flowers and candies. You can place the candies into a bag which you can make using some nice papers. On the bag, you can write "For someone who's sweet". Or perhaps, write a poem.
She gave you something that's memorable to her. So if you can't find something that's memorable to you, to give to her, you can personalize the gift your own way. :)
