I always add about a teaspoon of Kitchen Bouquet to mine, it gives it a rich brown color and adds flavor

Sage, rosemary, thyme, tarragon, pepper are all good seasonings to use in combination and add in a little Worcestershire sauce too.

i use a lot of red wine in the broth, cometimes a can or package of onion soup. a great way to season the broth is before you start, take the pot you are using, heat it to a high heat and brown the meat in it. then remove the meat and carmalize a onion in the browned bottom of the pot.
