You can't go wrong with sugar cookies and kids :) Have a variety of colors of frosting and lots of fun decorations set out on the tables. Make sure that the cookies have been baked a little larger than usually so it's a good size canvas for the kids.
*Cinamon dots, silver balls, red, green, silver sprinkles, gum drops, chocoloate chips and candy canes (mini or broken up) are fun to decorate with!
Gingerbread Houses for decoration--
collect milk cartons (the little ones they drink from in school) and then have a supply of frosting and graham crackers that they can make the house. Then have an assortment of candy on hand for them to decorate their houses with.

Use graham crackers and pre-made frosting (in a tube?) to make mini "gingerbread" houses. Tootsie Rolls look like logs...Hot Tamales are great as bricks, and Shredded Wheat is great as thatched roofing.

Prebake some Sugar cookies (nice big ones) Then give them some tubes of colored frosting and sprinkles. You could make it into a game, making characters or spelling their names. I always reward them by allowing them to swap one cookie with their siblings. they get a kick out of the sharing and always compare whos was better LOL

Prepare some gingerbread men (and women) ahead of time and have them decorate them. Give them little cups of mini marshmallows, M&M's and other things to put on them. They will love it!

let them make candy cane cookies. all you do is make sugar cookies and die half of the dough red. then twist the red dough and the white dough into the shape of a candy cane.
