bubble and squeak was invented to use up the leftovers from sunday lunch. so technicaly there is no recipe as such. use whatever you have ..chopped roast potatoes, cabbage, leeks, sprouts. just fry or oven bake with some butter and seasoning.

Bubble and Squeak

Serves 4
1 oz Butter
1 Finely chopped Onion
1 lb Cooked and mashed Potatoes
8 oz Cabbage
4 - 8 Slices Beef, cooked and finely chopped (optional)

Method
- Melt the Butter in a large frying pan
- Add the Onion and fry for a few minutes until softened, stirring frequently
- Add the potatoes and Cabbage, if you are including the beef, add this as well
- Fry over a medium heat for 15 minutes until brown then serve

Ingredients

3 medium potatoes
1 onion
green cabbage
olive oil
mustard
vegan margarine

Peel and chop the potatoes. Boil for 10-15 minutes until soft.

Meanwhile peel and finely chop the onion and finely chop some cabbage. Fry the onion and cabbage until brown.

When the potatoes are cooked mash them up with some margarine and mustard. Then add the onion and cabbage mixture into the potatoes and mix together ready for serving.

Will serve about 4 people and is nice served with steamed vegetables.

1 lb pork sausage
1/2 onion, chopped
2 cups cabbage, chopped and cooked
4 tablespoons butter
4 tablespoons flour
2 1/2 cups milk, heated
salt and pepper
1/2 cup breadcrumbs


Brown the sausage in a skillet.
Remove from pan to a bowl, then add the onion to the sausage drippings and cook till limp.
Add the onion to the meat; mix well and spread in a buttered 1 1/2 quart casserole.
Layer the cabbage on top, salting to taste.
To make the white sauce, melt the butter in a heavy saucepan; stir in the flour and cook, stirring constantly, until the paste is thick and bubbling, but not brown, about 2 minutes.
Add the hot milk, continuing to stir as the sauce thickens.
Bring to a boil; add salt and pepper to taste, lower the heat and cook, stirring, for 2-3 minutes more.
Pour sauce over cabbage and top with the bread crumbs.
Bake 30-40 minutes at 350 degrees F till bubbling and hot.

My recipe for a good bubble and squeak is the leftovers of Sunday dinner. You mash all the leftovers (veg & meat) then fry on both sides (like a pancake) on a low heat. Delicious with brown sauce! Yummy.

Aussie Bubble and Sqeek.....

750g floury potatoes(peeled and quartered),
1/2 cup milk,
80g butter,
pinch nutmeg,
450g green veges(finely sliced),
3-4 rashers of cooked,
chopped bacon.

Steam or boil potatoes until just tender, drain well, put the milk in a large saucepan and heat, add cooked potato and half the butter, then mash well until smooth and creamy.

Melt half the remaining butter in a large heavy based ovenproof pan and cook the green veges until tender, add these to the potato mix,add bacon and mix together , season with salt and pepper.

Preheat the grill, melt the remaining butter in the same pan, then spoon in the potato mixture, smoothing off the top, cook until the bottom is brown and crispy, remove from heat and place under the grill, until the top is also crisy.

The best is, all your leftover meat an veg chopped up and mixed with a couple of eggs and fried. If its a bit bland, mix in some gravy or stock, yummy. And no wasted food.

Just mix mashed potato with cabbage and fry it in butter.

I basically make my mash by boiling potatoes til they're ready, mashing them with butter and milk and mixing it together with a little salt. I boil my cabbage and then add butter to that.

Just cooked potatoes and cabbage you can add chopped onions and fry til its crispy. Mmmmmmmmmmmmm delicious
