i can make the pastry but need to spice up the mince a little.

It is a common misconception that adding more chilli powder will make the food taste hotter. You will reach a point where you can just taste nothing but chilli and will have ruined the dish. If you want to make a dish with already a lot of chilli in it that little bit hotter, add some other types of hot pepper as well, but in small amounts so that you don't drown the various flavours. For a really hot dish, I will normally add extra black pepper and some Cayenne pepper (careful with the latter - a pinch gives a slight kick, a sprinkle knocks your socks off!).

You need to use some garam masala, it's a bit like curry, with a little bit of a differnt taste. It's a key ingredient in making samosas. Test the batch before you make the samosas. If you need it hotter, try adding some sambal....very hot red chilli paste.

I suspect the spiciness comes from fresh peppers, like jalapenos or something more exotic, like thai peppers. You could probably use anything you wanted and adjust the spices accordingly. You can also used dried pepper powder, if you have any, but they have varied tastes that may not give you the flavor that you want., like cayenne pepper. Try fresh jalapenos first and go from there.

1/2 pound of ground beef
1/2 small onion, chopped fine
1 garlic clove , minced fine
and use black pepper, salt, cayenne (red) pepper,
and a tiny smidge of these
cumin, couriander, tumeric, cinnamon, clove, cardomom. or some xtra hot curry powder (good brand)
I always fry up the meat then toss in spices and taste till it comes like I want it.. then place little spoonfuls onto the dough.. goodluck!.. we eat those things like water here in SaudiArabia.. thanks to the indian influence and spices here... mmmm! good!

just rang my mum, she uses garam massala and if she want s them extra hot she adds dried chilli's
