Um, where to begin? You have to do cost control, pricing, aware of margins, 8 billion tons of paperwork, hiring and firing, more paperwork, watching health standards, fielding calls, making calls, marketing, accounting, bookwork, more paperwork, establishing a good relationship with vendors. God there's so much more. Setting policies, safety procedures...the mind boggles.
