INGREDIENTS
8 ounces almond paste
2 cups confectioners' sugar
1/4 cup corn syrup
3 drops any color food coloring

DIRECTIONS
Break the almond paste into small pieces over a medium bowl. Add 1 cup of the confectioners' sugar, and work it in with your hands until incorporated. It will be crumbly. Add another 3/4 cup of sugar, and work it in really well. Pour in the corn syrup, and work it in until evenly blended. Spread remaining sugar out on a clean work surface, and knead the dough until smooth and uniform, 3 to 5 minutes. If the dough seems too sticky, knead in more sugar. Wrap the dough in plastic wrap, and refrigerate for about an hour. It should have the consistency of modeling dough.

Break off small pieces of marzipan to color, kneading in color thoroughly until you arrive at the desired color. Then blend the colored pieces into larger portions of dough. Dust a work surface and rolling pin with confectioners' sugar, and roll dough out to 1/4 inch thickness. Cut into desired shapes using small cookie cutters to make candies.

Apple Marzipan Galette:

Marzipan (sweetened almond paste) can be found with other baking ingredients in the supermarket. Look for it packaged in a small box or can.

1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
Cooking spray
1/2 cup marzipan, softened
4 cups sliced peeled Granny Smith apple (about 2 pounds)
3/4 cup sugar, divided
1 tablespoon all-purpose flour
1 teaspoon almond extract, divided
2 teaspoons lemon juice
Dash of salt

Preheat oven to 425°.

Line a jelly roll pan with foil; coat foil with cooking spray. Roll dough to a 14-inch circle on a lightly floured surface. Place dough on prepared pan. Roll marzipan to a 9-inch circle on a lightly floured surface. Place marzipan on top of dough.

Combine apple, 1/2 cup sugar, flour, 3/4 teaspoon almond extract, juice, and salt in a large bowl; toss well. Spoon apple mixture over marzipan. Fold 2-inch dough border over the apple mixture, pressing gently to seal (dough will only partially cover apple mixture). Bake at 425° for 30 minutes or until lightly browned (apple filling may leak slightly during cooking).

Place 1/4 cup sugar in a small heavy saucepan over medium-high heat; cook until sugar dissolves, stirring as needed to dissolve the sugar evenly (about 4 minutes). Cook 1 minute or until golden. Remove from heat; carefully stir in 1/4 teaspoon almond extract. Drizzle over galette.

Yield: 8 servings

MARZIPAN IS GROUND ALMONDS, ICING SUGAR, EGGS. IT IS VERY EXPENSIVE TO MAKE.YOU ARE BETTER OFF BUYING THE READY MADE STUFF. YOU CAN ALWAYS ADD SOME EXTRA ALMOND ESSENCE.TO GIVE IT A BIT MORE TASTE,THATS WHAT I DO.

I just use 8oz ground almonds, 8oz icing sugar then bind together with 2 egg yolks and lemon juice-about 1 tbls. You need to work it quite hard to get it to form into a ball,don't be tempted to put too much lemon juice in at first. And don't worry about the egg yolk not being cooked,there is enough sugar in recipe for it to be preserved. Work and shape as you want then leave to dry for a few days once shaped before doing anything else with it.

apparently there are 2 ways of making marzipan cooked or uncooked. i found this interesting site for you so check it out and decide which is best

I buy it from Asda (Walmart). More cost/time effective.

No really it is. The price of the individual ingredients and the time taken to make the stuff is not outweighed by the quality of the final product.
