I prefer wood. I think it looks more natural. Glass is easily cleaned but it must be done more often because of fingerprints and such. Wood is easy to clean as well because most tables come with a protective layer over the table. All you have to do is wipe it down and every once and while use some lemon oil and it doesn't show all the blemishes like glass will.

I have done it two ways.
1. You can buy a kit of fiberglass coating with hardening agent and put that on, but that has to be done outside, it stinks.
2. With a walnut table, I applied five coats of polyurethane, then sanded out the brush marks with a extra fine sandpaper and then applied another five coats. After that, I sanded it out again with a light sandpaper and then polished it down with Maquires finest auto body rubbing compound. Not being satisfied with that, I bought some Mother's Mag Wheel polish and polished it like glass. It is time consuming, take 10 days to put on ten coats and takes a lot of patience to rub it out, but if you are looking for how to do it, that is how.

U.S. Composites Kleer Kote Table Top Epoxy is one of the products used to get the finish you are looking for.
It will give you that Glass Like finish you see in many restaurants.

The best result is "French Polishing" which is skilled, time consuming and expensive. There is lots of info on the web about staining and laquering for a run of the mill table, but if you want a professional finish, get a professional to do it.
