I need to make cheese from Buffalo milk, vinegar and salt.

I don't know about the vinegar and salt but this is one way I make a soft type of cheese from cow's milk which I get off the farm and it is very easy. It goes delicious with fresh tomatoes.

Here is what you do but you have to take good care- put the milk in the pan, and simmer over low ( lowest) heat until you see the 'cheese' and water separate. Once it has all separated- pour into a special cheesecloth material so all the water will drain away- squeeze gently and place on plate, serve fresh. Will keep a couple of days in fridge only.

This is the only way I know- not sure if is helps but you could give it a try.
