Now I can't find it, if it was your recipe, please may I have it?

No, actually, I saw the recipe (it was an answer) while browsing through, questions, I thought I had added the question to my watchlist, obviously I didnt. But your recipe sounds real scrummy. Just that the one Im after was pretty quick n simple.

Is this it?......

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

Lots of recipes. I would suggest that you check out your answers if you responded to that question. otherwise here is what I have.

Chicken with Cucumbers


Ingredients:

2 tablespoons salad oil
2 1/2- 3 lb. broiler-fryer chicken, quartered
1/4 pound mushrooms, sliced
1 garlic clove, minced
3 tablespoons all-purpose flour
1/4 cup dry sherry
2 chicken-flavor bouillon cubes or envelopes OR 2 teaspoons chicken flavor stock base
1 1/2 teaspoons salt
1 1/2 cups water
2 large cucumbers
8 oz. sour cream
In 12 inch skillet over medium high heat, in hot salad oil, cook chicken until browned on all sides. Remove from skillet. Add mushrooms and garlic to drippings in skillet. Cook about 2 minutes. Stir in flour until blended. Gradually stir in sherry, bouillon, salt and water. Cook, stirring constantly, until mixture is slightly thickened.

Add chicken, heat to boiling. Reduce heat to low. Cover and simmer 30 minutes, stirring. Meanwhile, cut half of a cucumber into very thin slices, set aside for garnish. Peel remaining cucumbers and cut into large chunks. Add cucumber chunks to chicken and continue cooking 15-20 minutes or until chicken is fork tender and cucumber is tender-crisp. Stir in sour cream. Cook until heated through, but do not boil. Arrange chicken pieces on warm platter, surrounded with chunks of cucumber and pour on sauce. Garnish with cucumber slices.
