I'd say it's both. The "V" flight pattern is probably learned; the idea of flying in a tailwind ("sleep flying") during long journeys seems too sophisticated for instinct alone to instill.

Instinct. If they do have to learn it takes them about 2 minutes. When they fly depends on when their wings are developed and strong enough.
